Airbnb Glazed Carrots #Kitchenlessness

The #kitchenlessness is getting real…and old. I ended up in an Airbnb reservation on Thanksgiving but found a dinner to crash. And thought I’d bring a side. Mac’n’Cheese was missing from the menu but I had my qualms about shopping and producing on time in a kitchen that wasn’t my own. Figured we’d have some glazed carrots- a quick and simple one-dish recipe. Turns out the kitchen wasn’t quite equipped with pots, pans, or even aluminum foil. So I settled for the microwave. Yikes.

Ingredients

  • Baby carrots, 2lbs
  • Hard chicken boullion cube, 1.5 ea
  • Black pepper
  • Cinnamon
  • Honey, 1/2+ c
  • Butter, 6 T
  • Juice of half a lime
  • Cilantro, chiffonade 2 T

Toss the carrots in the crumbled boullion, pepper, cinnamon and honey. Add to a large, microwave safe dish (I ended up using two dinner plates). Lay 4T sliced butter on top and microwave for about 9 minutes stirring about every minute.

Remove from the microwave and drizzle in the lime juice and add remaining butter, stirring to combine. You can drizzle a bit of honey over the top before sprinkling thinly sliced ribbons of cilantro. Check for taste and you’ve got your last minute contribution to the Thanksgiving table.

If it’s not last minute, take some time to show those carrots some love. Ha. Turns out the host found some foil paper later on. These measurements are very much approximate and can be adjusted as you see fit, of course. Make sure the carrots are as spread as they can be while microwaving to increase your chances of even cooking. It’s tough in the microwave, with soft centers and hard outsides, or just soft all the way through.
